What 12 mesh actually means
Mesh is a screen size: a 12-mesh grind passes through a screen with twelve openings per inch. In practice that gives you cracked pieces about the size of coarse sand, big enough to see, small enough to stick. It is the standard butchers and smokehouses specify, because it sits at the sweet spot between surface coverage and burn resistance. We print the mesh number on the front of the jar for the same reason a butcher asks for it by number: the grind is the product.
Where our peppercorns come from

Close, but a mesh spec is tighter than a label that just says coarse. Coarse can mean anything from cracked to nearly whole. A 12-mesh spec is a repeatable size, which matters when a rub recipe depends on it.
